The NV Les Houtrants complantés Brut Nature is a multi-vintage blend from an early ripening lieut-dit in Cumières that has been planted as a field blend of Pinot Noir, Meunier, Chardonnay, Arbanne and Petit Meslier. The parcel is worked with a horse and the grape juice is fermented without the addition of cultivated yeasts. Bottled with reserve wines that were stored in Magnums in 2011, this cuvée has been aged under cork (tirage sous liège) until the disgorgement in June 2015. This is another great Champagne from Jean-Baptiste Geoffroy and readers with a great passion for individual Champagnes should definitely try it. The wine opens with a clear, fresh and very subtle bouquet of ripe white fruits and some floral aromas. Very elegant, pure, fresh and mineral on the palate, this is a lean but complex cuvée with a nice grip in the very mineral and persistent finish. Rare. Total production is 1,000 bottles.

Bresse chicken with morel mushrooms, quail with grapes or a fricassee of forest mushrooms harmonise perfectly with this Champagne.
